then cut chicken thigh into large bite-size pieces.
Marinade the chicken
Add Cooking Sake(30g), Soy sauce(20g), the 3g grated ginger, the 3g grated garlic, Salt (1 pinch), Pepper (2 pinches), To a plastic bag and mix them until combined.
Add the chicken into the plastic bag. Rub it in to marinade and leave for about 10 minutes.
Add the batter
Mix the Potato Starch(50g) and the Flour(50g) until combined.
Mix the batter and the chicken until the chicken pieces are fully coated.
Then dust off the excess powder.
Fry the chicken
Heat some cooking oil in a pan to 170℃
and put the chicken pieces in.
1 minutes later, turn them over and fry for another minute.
Placed the half cooked chicken pieces on a wire rack or kitchen roll
Leave them for about 3 minutes.
Finish up frying
Re-heat the cooking oil in a pan to 180℃.
Fry the chicken pieces again for 1 minutes.
Then turn them over and fry for another minute.(till golden brown)
Placed the fried chicken pieces on a wire rack or kitchen roll.
Serve and enjoy
Serve hot or cold with some lemons / citruses wedges and squeeze of Japanese Mayonnaise.
